There is no turning back from shyness, but strange things happen in the kitchen: it is a formidable lie detector, it finds and brings out aspects of me that I didn’t even think I had. This is why being a cook is something I am particularly proud of. I do it in exchange for the possibility that food gives me to express myself. On paper I could be anyone but my dishes become an expression of who I am. I never leave the kitchen to prove, every day to myself, that it is only with hard work that certain goals can be reached. And of all those achieved, the first to be surprised is always me. I couldn’t imagine my life any other way.
